Cooking Yucca (tortilla)

After the straining, Señora Florinda sifted the dried tuber and then (it looked like shredded coconut at this point) spread it on the ceramic griddle over the wood fire. The finished tortilla had a nutty, delicious flavor. We spread tuna salad or peanut butter and jelly on torn-off pieces and feasted quite well, thank you very much!
